If the bacterium that produces the toxin have this enzyme and the insects do not, the bacteria can defend themselves against the toxin by destroying it, while the insects die. When a bacterium develops immunity against an antibiotic, it can be caused due to a mutation that leads to the production of an enzyme that destroys the antibiotic, rendering it useless.
