Strawberry muffins

Ingredients

1 1/4 cup of strawberries

1 cup of coconut milk

1 teaspoon of sugar

1 cup of flour

1 teaspoon of baking powder

2 eggs

1/2 cup of butter

Instructions

In a small bowl, toss the strawberries with two teaspoons of the flour. Toss well and set aside 1/2 cup of the strawberries for topping the muffins.

In a large bowl, beat the butter and sugar for a few minutes until light and fluffy. Add the eggs one at a time, beating well after each addition.

Gradually add the flour, alternating with the milk, adding the dry ingredients to the batter

Fold to combine. Spoon the batter into a lined muffin tin.

Bake for about 30 minutes, until golden and set. Then let the muffins cool in the pan for about 25 minutes.
