Red Beans Stew (English version)
Ingredients
100 grams of cooked belly pork in water (optional)
1 tbsp oil
1 onion chopped
250 grams of red beans soaked for up 6 hours or use 2 cans of red beans (Pinto beans)
250 grams of chopped tomatoes or 1 can of chopped tomatoes
2 tbsp of tomato's paste
1 green plantain finely chopped (Optional)
1 clove garlic, crushed or garlic paste
1 tsp of cumin
Salt and pepper to taste
Preparation
Heat the oil in a frying pan and cook the onions on a gentle heat until soft.
Cut the belly pork into small pieces and add to the mix.
Add the beans, plantain, garlic tomatoes, and tomato paste and leave to cook for 30 minutes or until the sauce is thick.
Add the salt and pepper to taste.
Bring to the boil in a presure cooke for about 30 minutes or simmer until the beans are soft.
Serve with slices of plantain, pork crackers, tomato and onion sauce and avocado.
