El "so" actúa como "tan" mientras que el "that" actúa como "así que, que", creo que una manera sencilla en la que podrías saber dónde se coloca es cada uno es cerca del adjetivo. Por ejemplo, en la 2ª oración habla de que su primo es tan tímido que se esconde, "tímido" sería evidentemente un adjetivo.
Otra de las opciones sería traducir la oración y cambiarla usando "tan" y "que, así que". Espero haberte ayudado
