Ingredients
250g unsalted butter, softened
250g caster sugar
250g self-raising flour
Pinch of salt
4 medium eggs
4 tablespoons milk
Ice-cream scoop (optional)
½ cup unsalted butter, softened

2 cups confectioners' sugar, sifted
2 tablespoons milk
3 drops food coloring, or as needed
Method
Set the oven to 190C, gas 5.
Tip the butter into a bowl and beat it until softened. Then add the sugar, flour, salt, eggs and milk and whisk until the mixture is smooth.
Use a traditional-style ice-cream scoop as it makes things a little easier when you're making lots of cakes, or any other spoon, to divide the mixture between all the paper cases.
Place the muffin tins in the oven and bake for 15 minutes, then swap over the position of the tins over and bake for a further 3-7 minutes or how many minutes it takes them to get a light golden colour.
Remove the tins from the oven. Leave the cupcakes to cool in the tins for a few minutes. Then transfer them to a wire rack to cool.
Then we're making the frosting
Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract.
Pour in milk and beat for an additional 3-4 minutes. Add any food coloring, if using, add as much as you need, and beat for thirty seconds until smooth or until desired color is reached.
Take the cupcakes out of the wire rack and try to elaborate a little special presentation and frost them, you'll ve surprised about how much better they can look with a nice decoration.
You can add some extra toppings like chocolate chips or coconut, it does not matter how many you add, just have fun with it.
