Pot beans:
250 g of clean beans, soaked overnight and drained
½ onion
1 clove of garlic
1½ Ɩ of water
1½ tablespoons of lard
1 branch of epazote salt to taste
Enfrijoladas:
1 pickled chipotle chili
2 tablespoons of lard pork
1 branch of epazote enough oil to fry
12 tortillas
Pot beans:
1-Place the beans, onion, garlic clove and 1 liter of water in a pressure cooker, close and put on the fire. Count for 30 to 35 minutes of cooking time after the steam begins to escape from the pot.
2-Remove from the heat, let the pot cool completely, uncover it and add the butter, epazote, salt, and if desired, the remaining water. Bring to a boil again to integrate the flavors. Reserve.
Enfrijoladas:
1-Blend the beans from the pot with a little of their broth and the chipotle chile. Heat a saucepan with the butter and when it smokes, add the ground beans. Add the epazote branch and boil for 5 minutes. Remove the epazote and reserve. In the end you should get a slightly thick sauce.
2-Heat the oil and put the tortillas in it one by one for a few seconds, just to soften them.
