1 kg veal or beef (it can be from any tender part that has not much fat). Ask your butcher to cut it into thin slices.

4 eggs

½ kg breadcrumbs

Salt

Black or white pepper

Sunflower oil (or any other that you prefer for frying)

Chopped/pureed tomato sauce (if you can get it, buy a tin especially prepared with onions, black olives, salt, pepper and basil)

Cheese similar to mozzarella (cut it into slices)

Whisk the eggs in a bowl and add salt and pepper

Put the breadcrumbs into another bowl

Cut off all the fat around the edge of the meat

Sprinkle some salt on each slice of meat

Dip one slice of meat into the beaten eggs, then take it out and let any excess egg mixture drip back in to the bowl

Then put the meat into the bowl of breadcrumbs and cover with breadcrumbs

Repeat with all the slices of meat

Then heat some oil in a frying pan. When it is hot put in the slices of “breaded meat” to fry. Fry on both sides

Meanwhile, heat the oven for about 10 minutes at maximum heat. Then, put all the “milanesas” on a baking sheet

Put some tomato sauce on the top of each of them and then add a slice of cheese

Take the baking sheet out of the oven as soon as the cheese melts

This dish can be accompanied with French fries, salad, mashed potatoes or you can eat them in a sandwich.

Peel and rinse the potatoes. Cut each potato lengthwise into 4 or 5 pieces, then cut each piece into sticks. The thinner these are, the crispier they will be. Place the fries in a large bowl. Cover with cold water, then allow them to soak 2 or 3 hours (or you can stick them in the fridge and let them soak overnight).  

When you're ready to make the fries, drain the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry.  

Heat a few inches of vegetable oil to 300 degrees F in a heavy pot. In 3 or 4 batches, fry the potatoes about 4 to 5 minutes per batch, or until soft. They should not be brown at all at this point-you just want to start the cooking process. Remove each batch and drain them on new, dry paper towels.  

Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil temperature reaches 400 degrees F. When the oil is hot, start frying the potatoes in batches again, cooking until golden and crisp. Remove from the oil and drain on fresh paper towels. Sprinkle the fries with sea salt and dive in with the ketchup-mayo mixture.
