"We haven't got many folders, but we have got a lot of writing pads." Está bien escrito.

"Is there much post to distribute?" Se usaría 'a lot of'

"There aren't much people in the office today, so we have a lot of work to do. Se usa many.

"Sue is ordering many staplers." Quedaría mejor 'a lot of', o 'too many' pero ésta última cambia un poco el significado.

"There isn't much paper in the stockroom." Está bien, como alternativa se puede usar 'a lot of'

There are much things to do, but we don't have a lot of time to do them. Se usa many.

La regla es que many se usa para sustantivos contables/plurales y much para sustantivos incontables/singulares.

Saludos!
