Para los possesive noun (pronombres posesivos) le debes añadir 's al sujeto que posee dicha cosa, al terminar algunas palabras en s por plural o porque simplemente terminan en s se les coloca solo el ' después de la s y se procede con la cosa sobre la que se está ejerciendo posesión.
Acá en The waitress' name is Susy por ejemplo, el nombre de la camarera es Susy, entonces la camarera es el sujeto en ese caso ya que se habla del nombre de ella y el nombre por tanto sería sobre lo que se ejerce posesión.
